
Cheesy Courgette and Feta Pastry Swirls

Whether you're hosting friends, feeding hungry kids, or just treating yourself, these scrolls are dangerously good—one bite and you'll be reaching for another. Let’s get baking!
Ingredients
- 1 x justroll puff pastry
- 1/2 jar The Moreish One: Charred Aubergine Pickle
- 1 block vegan feta* (also delicious with cheddar or mozarella)
- 1 courgette
- 2 tbsp oat milk*
Method
- Preheat the oven to 200C.
- Layout your puff pastry.
- Liberally coat with The Moreish One: Charred Aubergine Pickle
- Crumble the feta cheese and sprinkle over the pastry.
- Using a vegetable peeler, peel off long ribbons from the courgette.
- Layer the courgette ribbons over the feta, covering the whole of the pastry.
- Roll the pastry tightly to form a long sausage, and slice into 8 even pieces.
- Prepare a baking sheet with parchment paper.
- Lay your pastries down on the paper with the cut side facing up.
- Brush with oat milk.
- Bake for 12-15 minutes until golden and crispy.
- Enjoy!
*For non vegan option, use regular feta and milk
