Spiced Plum Chutney and Cheddar Breakfast Scrolls
Share
These cheddar and spiced plum scrolls are everything you want in a weekend bake — soft, fluffy dough, a hit of warming spice from the plum chutney, and loads of melty, golden cheese. Perfect for brunch or as part of a lunch spread, they’re totally moreish (and borderline impossible to resist warm from the oven). Use this recipe as your base and get creative — we’ve also tried them with XO sauce or smoky BBQ and can confirm: also amazing.
Ingredients
- 240g plain flour (2 cups)
- 20g baking powder (5 tsp)
- 7g salt (1 tsp)
- Cracked Pepper
- 50g chilled butter
- 125ml milk (½ cup)
- ⅓ jar of Spiced Plum Chutney
- 100g gouda or hard cheese
Method
- Preheat the oven to 200℃ fan bake.
- Measure flour, baking powder and salt into a bowl. Crack in a generous amount of pepper.
- Grate the butter into the bowl (this works best when it’s straight out of the fridge, alternatively cut the butter into small pieces).
- Rub the flour and butter between your fingers until the butter is dispersed and the flour resembles fine breadcrumbs.
- Pour in milk and mix quickly to form a soft dough. Knead gently to ensure it’s fully mixed.
- Sprinkle a little flour on your bench and roll the dough out into a rectangle with a 1cm thickness.
- Cover the dough with the plum chutney (be generous, you know it tastes delicious) and cover with grated cheese. Roll the dough up so you form a long log. Trim the end pieces, and cut into 6 scrolls.
- Line a baking tray with baking paper and place your scrolls on the tray, cut side up. Make sure they are well spaced as they will spread out as they cook. Brush with a little milk, and sprinkle with extra cheese.
- Bake for 12 minutes, or until they are golden brown.
- Enjoy warm from the oven, or with lashings of butter.
