XO Chicken Ramen with Pickled Mushrooms

Ingredients:

1 pack ramen noodles

1 tsp neutral oil

1tsp garlic, minced

1 knob ginger, minced

1 tbsp XO Sauce

150g chicken mince (optional)

 

For the broth:

1 1/2C chicken broth, warmed

2 tbsp tahini

1 tsp chilli oil (we love something with some crunch)

1 tsp XO sauce

1 tsp soy sauce


Recommended toppings:

Soft boiled egg

Spring onions, finely sliced

Wilted Pak Choi

Pickled Japanese Mushrooms

Sesame seeds


Method

  1. Heat a pan to a medium high heat. Add in the oil, garlic, ginger and xo sauce and cook for a minute until fragrant.
  2. Add in your chicken mince and cook until fully cooked.
  3. In your serving bowl, add tahini paste, chilli oil, soy sauce, and XO sauce and whisk until combined. Add in your warm chicken broth and stir.
  4. Add in your cooked noodles and chicken and finish with your desired toppings.
  5. Enjoy!
