Nectarine and Almond Cake


  • 125g butter

  • 100g sugar

  • 3 eggs

  • 100g almond flour

  • 100g plain flour

  • 5g baking powder

  • 2 nectarines

  • 1/2 jar The Punchy One


  1. Preheat the oven to 170C fanbake. Line a 20cm cake tin with baking paper.

  2. Cream the butter and sugar until light and fluffy. Add in the eggs, one at a time, beating until smooth.

  3. Fold through the baking powder, almond flour and plain flour until you have a smooth batter.

  4. Slice the nectarines thickly and layer over the cake.

  5. Spread The Punchy One over the nectarine slices, ensuring you go all the way to the edge of the cake.

  6. Cook for 30 minutes until golden brown.

  7. Cool in the tin. Serve with whipped coconut cream.
