Butter Beans with Cavalo Nero and Cherry Tomatoes

Ingredients

Olive oil

1 onion, finely sliced

2 cloves garlic, grated

2 heaped tbsp Miam Jars The Moreish One

1 tbsp tomato paste

½-1 tsp chilli flakes (or more if you want it hot!)

Handful cherry tomatoes, halved

1 jar butter beans (we love Bold Beans)

2 handfuls cavolo nero/leafy greens, washed and sliced

Zest and juice of 1 lemon

Herbs to serve eg. parsley, coriander, dill 

Vegan feta to serve

Sourdough

Preparation

  1. Heat a good glug of olive oil in a heavy based pan.

  2. Add onions and garlic and saute over a medium heat until translucent.

  3. Add in tomato paste and The Moreish One and cook for a minute unti a little sticky.

  4. Add in ½ tsp of chilli flakes with ½ a cup of water and stir to get all the flavour from the bottom of the pan.

  5. Simmer until the tomatoes have broken down.

  6. Tip in the jar of butter beans with the bean stock and simmer for 5 minutes.

  7. Add in the cavolo nero and cook until wilted.

  8. Add in the zest and lemon juice.

  9. Check seasoning and add in more chilli, salt and pepper to taste.

  10. Serve sprinkled with fresh herbs, olive oil, crumbled feta and toasted sourdough for scooping.
