The Dinner-done One

Ingredients
150g orzo
1 jar The Dinner-done One
1 handful cherry tomatoes
2 handfuls kale or spinach
½ tsp chilli flakes (optional)
Zest and juice of one lemon
½ block of vegan feta
2tbsp flaked almonds
Olive oil
Parsley
This version uses kale and cherry tomatoes, but other delicious combos to try are:
- Sweet potato and spinach
- Red onion, mushroom and capers
- Aubergine, spinach and olives
- Medley of leftover roasted vegetables.
Method
Preheat the oven to 180C.
In a casserole dish add the orzo, red pepper sauce and 400ml water (2 jars worth).
If using, add in the chilli flakes and stir to combine.
Cover with the halved cherry tomatoes and cover with a lid.
Place in the oven for 20 minutes.
Remove from the oven, and stir the orzo. Add in the kale and stir.
Sprinkle with the feta and sliced almonds and cook for a further 5 minutes until the almonds are golden and the orzo is bubbling.
To serve drizzle with olive oil and sprinkle over parsley. Enjoy with fresh bread or some steamed broccoli on the side.
