Next-level Eggs with The Umami One
The Umami One
Ingredients
4 eggs
2 tbsp spring onions, finely sliced
½ tsp chilli flakes
2 tbsp ‘the Umami one’, (mushrooms only)
4 slices sourdough toast
Chilli oil
Method
In a bowl whisk the eggs with the spring onion, chilli, salt and pepper. Heat a little oil in a fry pan. While this is heating, get your toast on.
Now it’s time to scramble the eggs, I go for the Italian push method (heat the pan up to almost smoking, then turn off the heat and add the egg mix and quickly push around to get just cooked eggs). Whatever way you choose, remember they will keep cooking once you turn off the heat so stop before they are fully cooked to get silky scrambled eggs!
Butter your toast, if you want to, then layer with your eggs. Top with sliced mushrooms from 'the Umami one', and drizzle your eggs with a little of the pickling liquid and some chilli oil.
Finish with some extra sliced spring onions and you're ready to go.
